Weeknight Meal Slump: 10 Meals in Under 20 Minutes

06 May, 2026

It's 5:30 p.m., everyone is tired, the kids are getting impatient, and the fridge contains leftover vegetables, two eggs, and a little soy sauce. You don't feel like cooking and have no idea what to eat. Of course, even though it's generally recommended to plan your meals for the week, the reality is that everyone sometimes runs out of time or inspiration. So here's a bank of quick, reliable, and good enough meals to keep everyone happy and full!

1. Garlic and Olive Oil Pasta

The simplest recipe in the world, yet one of the best! While the pasta cooks, sauté minced garlic in a generous drizzle of olive oil, add chili flakes if the kids tolerate them, and mix everything with the drained pasta. Add a little grated Parmesan, salt, pepper, and it's ready! Garnish with frozen shrimp or pre-cooked chicken for a more substantial version.

2. Cheesy Scrambled Eggs with Toast

A certainly underestimated yet nutritious and delicious meal! Creamy scrambled eggs mixed with melted cheese, served with toast and a handful of raw vegetables on the side, it's nutritious, quick, and kids usually love it! Make it a burrito version with a tortilla and salsa.

3. Egg and Vegetable Fried Rice

Definitely the best friend of leftovers, pre-cooked rice (or microwaveable packet rice), frozen vegetables, two or three beaten eggs, soy sauce, and a few sesame seeds to cook in a wok or a large pan over high heat, and in ten minutes you'll have a complete meal! Add edamame for a touch of protein.

4. Express Quesadilla

Tortillas, grated cheese, and whatever is lying around in the fridge and pantry: shredded chicken, canned black beans, corn, peppers... Assemble, brown in a pan for two minutes on each side, and serve with salsa, sour cream, and guacamole if you have any. A tasty meal that the whole family will surely enjoy!

5. Express Noodle Soup

A store-bought chicken or vegetable broth, rice noodles or vermicelli, frozen vegetables, a few slices of tofu or poached eggs, seasoned with soy sauce, ginger, and a squeeze of lime. A hot, comforting soup ready in less than 15 minutes!

6. Tuna or Chicken Wrap

Open a can of tuna or use leftover chicken, mix with mayonnaise, chopped celery, lemon juice, and a little mustard. Spread on a large tortilla with lettuce, tomato slices, and cheese. Roll up, cut in half, and serve simply with raw vegetables. Zero cooking and almost zero dishes!

7. Weeknight Tacos

Sauté ground beef or ground turkey with taco seasoning while everyone prepares the toppings: salsa, shredded cheese, sour cream, lettuce, corn. Everyone assembles their taco according to their taste; a participatory, quick meal, and the kids will love customizing their plate!

8. Naan or Pita Bread Pizza

Naan bread or pitas as a base, store-bought tomato sauce, shredded mozzarella cheese, and toppings of your choice. Bake in the oven at 425°F for 8 to 10 minutes. Make it an activity by asking each child to customize their pizza according to their tastes!

9. Butter and Parmesan Pasta with Quick Protein

The classic for families with young children, and there's no shame in admitting it. Buttery and well-salted pasta, a generous dose of Parmesan, and grilled sausages, chicken strips, or soft-boiled eggs if desired. Add frozen peas or broccoli to the pasta cooking water for a quick vitamin boost.

10. Improvised Grain Bowl

A base of rice, quinoa, or couscous (pre-cooked or in a packet), roasted vegetables from the day before or fresh raw vegetables, a quick protein (egg, rinsed canned chickpeas, leftover chicken), and a store-bought sauce (tahini, creamy vinaigrette, peanut sauce): a nutritious, colorful meal, and each family member can assemble their bowl according to their preferences.

The Real Secret: Having the Right Ingredients on Hand

These ten meals work because they rely on basic ingredients that you almost always have at home: eggs, pasta, rice, tortillas, canned legumes, cheese, frozen vegetables. By making sure you never run out of these essentials, you'll always have a solid Plan B, no matter what the week throws at you! 🍳
