2 cups leftover cooked meat or cooked legumes

4 cups leftover raw vegetables (prefer root and cruciferous vegetables)

2 tbsp. spice

½ cup of oil of your choice

2 tbsp. balsamic vinegar

Salt and pepper from the mill
Préparation

Preheat the oven to 375ºF.

In a large bowl, combine the vegetables, spices, oil, balsamic vinegar, salt and pepper.

Bake for 20 minutes or until all the vegetables are almost tender.

Add the leftover meat to the baking sheet and bake for another 10 minutes.
