Fruity cookies

Freeze for three months.

  • Ingredients

    • 3 large eggs
    • ½ cup butter, at room temperature
    • ½ cup firmly packed brown sugar
    • 1¾ cups all-purpose flour
    • 1½ cups quick-cooking rolled oats
    • 1 tsp baking soda
    • 1 pinch of salt
    • 2/3 cup milk
    • 1 cup fresh or frozen berries
    • ½ cup white chocolate chips
  • Preparation

    1. Preheat oven to 375F.
    2. In a bowl, using an electric mixer, mix the butter and brown sugar. Add the eggs and mix again.
    3. In another bowl, mix together flour, oats, baking soda and salt.
    4. Add the dry ingredients to the wet ingredients, alternating with the milk.
    5. Then add the berries and chocolate chips. Mix well.
    6. On two baking sheets, divide the mixture into 24 cookies, each weighing about 2 tablespoons. Lightly crush with a fork.
    7. Bake for 20 minutes or until cookies are set in the center.
    8. Keep for 5 days in the fridge or 3 months in the freezer, in an airtight container.
