Fruit and vegetable compote

Freeze for three months.

  • Ingredients

    • 6 cups (1500 ml) diced fruit (use ugly or frozen fruit: apples, mangoes, berries, etc.)
    • 1 large grated carrot
    • 1 large grated zucchini
    • 2 tbsp (30 ml) maple syrup
    • ½ tsp (3 ml) nutmeg
  • Preparation

    1. Place all ingredients in a large pot and simmer over medium-low heat, uncovered, until fruits and vegetables are cooked through and liquid is syrupy. Stir regularly.
    2. Place in the food processor until smooth.
    3. Let cool completely and place in reusable no-mess bags.
