Chicken croquettes and honey sauce

Looking for a healthier alternative to the store-bought nuggets your kids love? Try this recipe; breaded with barbecue chips, these chicken nuggets served with a sauce made with mayonnaise, Greek yogurt, honey and mustard are sure to please your little ones!

  • Ingredients

    For the kibble:

    • 450 g (1 lb) boneless, skinless chicken breasts
    • ½ cup (125 ml) all-purpose flour
    • 2 eggs
    • 4 cups (1000 ml) barbecue chips
    • Pepper from the mill to taste
    • ¼ cup (60 ml) olive oil

    For the honey sauce:

    • ¼ cup (60 ml) mayonnaise
    • ¼ cup (60 ml) plain Greek yogurt
    • 1 tbsp (15 ml) Dijon mustard
    • 2 tbsp (30 ml) honey
    • Salt and pepper from the mill
  • Preparation

    1. Cut the chicken into 2cm x 2cm cubes
    2. In a bowl, coat the chicken in flour and set aside.
    3. In another bowl, beat the eggs and set aside.
    4. Using a food processor, grind the chips into breadcrumbs. Place in a bowl and season with pepper to taste.
    5. Dip each piece of chicken in the eggs and then in the chip crumbs.
    6. In a skillet over medium-high heat, heat the oil and cook the chicken nuggets for 15 minutes or until cooked through. Turn regularly during cooking.
    7. In a small bowl, mix all the sauce ingredients. Season with salt and pepper to taste and serve with the croquettes.

Notes and tips

Add 1 tbsp (15 ml) of sriracha sauce to the honey sauce.
