
Chicken croquettes and honey sauce
Looking for a healthier alternative to the store-bought nuggets your kids love? Try this recipe; breaded with barbecue chips, these chicken nuggets served with a sauce made with mayonnaise, Greek yogurt, honey and mustard are sure to please your little ones!

Ingredients
For the kibble:
- 450 g (1 lb) boneless, skinless chicken breasts
- ½ cup (125 ml) all-purpose flour
- 2 eggs
- 4 cups (1000 ml) barbecue chips
- Pepper from the mill to taste
- ¼ cup (60 ml) olive oil
For the honey sauce:
- ¼ cup (60 ml) mayonnaise
- ¼ cup (60 ml) plain Greek yogurt
- 1 tbsp (15 ml) Dijon mustard
- 2 tbsp (30 ml) honey
- Salt and pepper from the mill

Preparation
- Cut the chicken into 2cm x 2cm cubes
- In a bowl, coat the chicken in flour and set aside.
- In another bowl, beat the eggs and set aside.
- Using a food processor, grind the chips into breadcrumbs. Place in a bowl and season with pepper to taste.
- Dip each piece of chicken in the eggs and then in the chip crumbs.
- In a skillet over medium-high heat, heat the oil and cook the chicken nuggets for 15 minutes or until cooked through. Turn regularly during cooking.
- In a small bowl, mix all the sauce ingredients. Season with salt and pepper to taste and serve with the croquettes.
