Potato Wedge Nachos

Skip the traditional chips included in a plate of nachos and opt for potatoes instead; add bacon, black beans, sour cream, tomatoes and Tex-Mex cheese, and make this an easy meal that's sure to be enjoyed by the whole family!

  • Ingredients

    For the potatoes:

    • 2 lbs yellow potatoes, quartered
    • 3 tbsp olive oil
    • Salt and pepper from the mill to taste

    For the nachos:

    • 1 can (540 ml) black beans, rinsed and drained
    • ½ cup crumbled cooked bacon
    • 1 ½ cups shredded Tex-Mex cheese

    Toppings:

    • 2 ripe tomatoes, roughly chopped
    • 4 green onions, chopped
    • 1 ½ cups sour cream
  • Preparation

    1. Preheat oven to 425°F.
    2. In a bowl, mix the potatoes with the oil, salt and pepper.
    3. Place on a baking sheet covered with parchment paper. Bake for 30 minutes, turning halfway through cooking.
    4. Preheat the oven grill.
    5. Add beans, bacon and cheese to potatoes and place under element for 2 minutes or until cheese is melted.
    6. Add toppings when serving.

Add 2 small jalapeño peppers, cut into rings.
