Pita pizzas

As the name suggests, this pizza recipe is made with pita bread, sun-dried tomato pesto, black beans and mini bocconcini, making it a new take on traditional pizza, but just as delicious and loved by kids!

Freeze for three months.

  • Ingredients

    • 4 large pita breads
    • 125 ml (½ cup) sun-dried tomato pesto
    • 1 can (540 ml) black beans, rinsed and drained
    • 2 green onions, chopped
    • 1 container of 200g of well-drained mini bocconcini
    • 30 ml (2 tbsp) olive oil
    • Salt and pepper from the mill
  • Preparation

    1. Preheat oven to 400F.
    2. Place pitas on a nonstick baking sheet or one lined with parchment paper.
    3. Spread pesto on each bun and top with black beans.
    4. Add the green onions and mini bocconcini.
    5. Bake for 15 minutes or until bocconcini are melted.
    6. Drizzle with olive oil, salt and pepper to taste.

Add 30 ml (2 tbsp) of fresh basil when serving.
