Grilled quesadillas with Caesar salad for lunchbox

  • Ingredients

    • 8 medium tortillas
    • 3 cups shredded cheese (Tex-Mex blend or cheddar)
    • 1 cup toppings of choice (peppers, onions, ham)
    • 1 romaine lettuce
    • ½ cup Caesar dressing
    • ¼ cup grated Parmesan cheese
    • ½ cup croutons
  • Preparation

    1. Divide the cheese and fillings among 4 tortillas.
    2. Cover with the remaining 4 tortillas.
    3. Cook in a skillet until the cheese is melted and the tortillas are golden brown.
    4. Cut each quesadilla into wedges.
    5. Wash and tear the romaine lettuce.
    6. Reserve the dressing, Parmesan, and croutons separately.
    7. Place the quesadilla wedges in the main compartment of the containers.
    8. Put the lettuce in a separate compartment.
    9. Pack the dressing in a small container and the croutons in a bag.
