Chicken and broccoli couscous
Ingredients
- 375 ml (1½ cups) couscous
- 500 ml (2 cups) of water
- 450g (1 lb) cooked chicken breasts, cut into 1cm x 1cm dice
- 500 ml (2 cups) broccoli, cut into small florets
- 2 chopped green onions
- 250 ml (1 cup) dried cranberries
- 45 ml (3 tbsp.) olive oil
- The juice of half a lemon
- 15 ml (1 tbsp.) vegetable spices
- Salt and pepper from the mill
Path to follow
- In a pot, bring 500 ml (2 cups) of water to a boil. Remove from the heat, add 375 ml (1½ cups) of couscous, cover and let stand for 3 minutes. Fluff with a fork and place in a large bowl.
- Add all the other ingredients and mix well. Serve hot or cold.
For adventurers
Add 250 ml (1 cup) of chopped walnuts.
