Wafers At The Molasses

Ingredients:
- 2 1/2 cups all-purpose flour
- 1 C. baking powder
- 1 C. baking soda
- 1/2 tsp. ground nutmeg
- 1/2 cup softened butter
- 3/4 cup brown sugar
- 1/2 cup molasses
- 1 egg
- 3 tbsp. milk
- ½ cup chopped walnuts (optional)
Preparation
- Preheat the oven to 375F.
- In a bowl, combine the flour, baking powder, baking soda and nutmeg.
- In another bowl, using an electric mixer, cream the butter with the brown sugar and molasses for 1 minute. Add egg, milk and mix well.
- Using a wooden spoon, stir the dry ingredients into the wet ingredients. Add the nuts and mix again.
- Drop golf ball sized balls of dough onto one or two non-stick baking sheets. Take care to leave a space of at least 5 cm between each pancake.
- Bake for 15 minutes or until a toothpick inserted in the center of the pancake comes out clean.
For adventurers:
Add 1 tbsp. ground ginger with dry ingredients.
