Comforting Stew

Ingredients
- 45 ml (3 tbsp.) olive oil
- 450 g (1 lb) chicken thighs, cut into 2 cm x 2 cm cubes
- 1 chopped yellow onion
- 2 minced garlic cloves
- 1 coarsely chopped red bell pepper
- 1 large sweet potato, cut into small 1cm x 1cm dice
- 1 can (540 ml) white beans, rinsed and drained
- 500 ml (2 cups) vegetable broth
- 15 ml (1 tbsp.) Dijon mustard
- Salt and pepper from the mill
Preparation
- In a pot, heat the oil over medium-high heat and cook the chicken, onion, garlic and pepper for 2 minutes. Stir in sweet potato, beans, chicken broth and Dijon mustard. Salt and pepper.
- Cover and cook for 30 minutes over medium heat, stirring occasionally.
For adventurers:
Replace the chicken thighs with the same amount of European sausages.
