Nutritious brownie-style muffins

Ingredients
- 1 can 540 ml black beans, rinsed and drained
- 3 eggs
- 45 ml (3 tbsp.) canola oil
- 60 ml (¼ cup) cocoa
- 2.5 ml (½ tsp) vanilla essence
- 125 ml (½ cup) all-purpose white flour
- 125 ml (½ cup) sugar
- 30 ml (2 tbsp.) ground chia seeds
- 1 pinch of salt
- 100g dark chocolate
Path to follow
- Preheat the oven to 375F.
- In a food processor, place the beans, eggs, oil, cocoa and vanilla. Grind until the mixture is smooth. Add the flour, sugar, chia seeds and a pinch of salt and mix well.
- Melt the chocolate in the microwave. Add to the mixture and mix again.
- Pour into a nonstick muffin tin or paper cups.
- Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
For adventurers
Add 15 ml (1 tbsp.) finely chopped fresh mint to the mixture before cooking.
