fruit and vegetable pudding
Ingredients
- 1 cup (250 mL) frozen fruit of your choice
- 1 cup (250 mL) coarsely chopped cooked beets
- 3 cups (750 mL) vanilla Greek yogurt
- 2 tbsp. (30 ml) maple syrup
- ¼ cup (60 mL) ground flax seeds
- Granola to taste
Preparation
- In a blender, blend all the ingredients except the granola until smooth and creamy.
- Sprinkle with granola when serving.
For adventurers:
Add 1 tbsp. (5 ml) ground cardamom when blending.
