Vitamin Beef Stew
Ingredients
- 3 tbsp. olive oil
- 450g beef bourguignon cubes
- 1 chopped yellow onion
- 3 cups butternut squash, cut into 1cm x 1cm dice
- 1 carrot cut into small dice of 1cm x 1cm
- 1 cup corn kernels
- 2 minced garlic cloves
- 1 liter of beef broth
- 4 bay leaves
- Salt and pepper from the mill
Preparation
- Preheat the oven to 375F.
- In an ovenproof saucepan, heat the oil over medium-high heat and cook the beef and onion for 3 minutes. Add salt and pepper to taste.
- Add the rest of the ingredients, scrape the bottom of the pan well to release the cooking juices.
- Cover and bake for 60 minutes or until beef is tender.
For adventurers:
Add ½ cup marinated pearl onions halfway through cooking.
