Hearty Chicken Soup

Ingredients
- 2 tbsp. olive oil
- 1 chopped yellow onion
- 2 celery stalks chopped
- 2 large grated carrots
- 1 cup grated turnip.
- 2 chicken breasts, diced
- 1 can lentils, rinsed and drained
- 2 minced garlic cloves
- 2 tbsp. tablespoon of your favorite spices
- 3 cups cold water
- 1 liter (4 cups) chicken broth
- Salt and pepper from the mill
Preparation
- In a large pot over medium-high heat, heat the oil and brown the chicken, onion, and celery for 3 minutes.
- Stir in remaining ingredients and simmer uncovered for 30 minutes or until vegetables are cooked.
- Place in freezer containers.
For adventurers:
Add 3 tbsp. tablespoon fresh basil once cooking is complete.
