Sushi-Style Cucumber Boats for Lunch Boxes

  • Ingredients

    • 4 English cucumbers
    • 2 cups sushi rice
    • 2.5 cups of water
    • 3 tbsp rice vinegar
    • 1 tbsp sugar
    • 1 tsp salt
    • 200g cream cheese
    • 200g smoked salmon
    • Soy sauce
    • Green onions
    • Sesame seeds
    • Sesame oil
  • Preparation

    -Rinse the rice until the water runs clear.

    -Cook the rice with water for 15-20 minutes, let stand for 10 minutes

    -Mix vinegar, sugar and salt, add to hot rice

    -Let the rice cool to room temperature

    -Cut the cucumbers in half lengthwise and hollow out the center.

    -Mix the cream cheese and chopped smoked salmon

    -Garnish the cucumbers with sushi rice

    -Add the salmon-cheese mixture

    -Distribute in the containers with the soy sauce

Notes and tips

-Cucumbers should be dried well after being cored.
-The rice should be at room temperature for better blending.
-The filling can be prepared in advance.
-Green onions can be added at the last moment.
-Soy sauce should be in a separate airtight container.
