Giant oatmeal cookie

Mix chickpeas, eggs and maple syrup, then add oatmeal, flour, baking powder and bicarbonate.   • Ingredients

    • 1 cup chickpeas or white beans, rinsed and drained
    • 2 eggs
    • ½ cup maple syrup
    • 2 cups oatmeal
    • ½ cup flour
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ cup chocolate chips
  • Preparation

    1. Preheat oven to 350F.
    2. Place the chickpeas, eggs and maple syrup in a food processor. Blend until smooth. Pour into a large bowl and add the remaining ingredients.
    3. Spoon the mixture onto a non-stick cookie sheet and spread out to form a giant cookie about 1 cm thick.
    4. Bake for 20 minutes or until center of cookie is cooked through.
