  • Ingredients

    • 500 ml (2 cups) all-purpose flour
    • 5 ml (1 tsp) baking soda
    • 15 ml (1 tbsp) baking powder
    • 190 ml (¾ cup) butter, at room temperature
    • 250 ml (1 cup) firmly packed brown sugar
    • 2 eggs
    • 5 ml (1 tsp) vanilla essence
    • 5 graham crackers, coarsely crumbled
    • 250 ml (1 cup) chocolate chips
    • 250 ml (1 cup) mini marshmallows
  • Preparation

    1. Preheat oven to 375 degrees F.
    2. In a large bowl, mix together flour, baking soda and baking powder.
    3. In another bowl, using an electric mixer, cream the butter and brown sugar for 1 minute. Add the eggs and vanilla essence and mix again.
    4. Add the flour mixture to the egg mixture and mix well using a wooden spoon.
    5. Add graham crackers, chocolate chips and mini marshmallows. Mix again.
    6. On two nonstick or parchment-lined baking sheets, drop the sponge cookie mixture. Shape into balls about 30 to 45 ml (2 to 3 tbsp.) in size. Lightly crush with a fork.
    7. Cook for 8 minutes. Cool and place in an airtight container. Keep at room temperature for 7 days or in the freezer for 6 months.

Notes and tips

When ready to serve, place the cookies on the BBQ grill over low heat, add a few mini marshmallows and heat for 1 minute or until the marshmallows are slightly melted.
