Stuffed Potato Bites
Ingredients
- 10 baby potatoes, cooked and halved
- 2 chopped green onions
- 30 ml (2 tbsp.) crumbled cooked bacon
- 45 ml (3 tbsp.) mayonnaise
- 15 ml (1 tbsp.) Dijon mustard
- 125 ml (½ cup) grated Swiss cheese
- Ground pepper
Preparation
- Preheat the oven to 400F.
- Place the bells in a foil packet and cook for 30 minutes.
- Take out of the oven and let cool.
- Cut the bells in half and, using a small spoon, remove a little flesh, keeping the skin intact, so as to form small bowls. Mix the flesh and all the ingredients.
- Fill the potatoes with this mixture and bake for 40 minutes, until the potatoes are tender and golden brown.
For adventurers
Add 1 finely chopped jalapeno to the stuffing.
Tip “ready to receive”
This recipe can go straight from the freezer to the oven. Place the potato bites on a baking sheet and warm in the oven at 350F for 40 minutes or until the bites are heated through.
