Stuffed Potato Bites

Who can resist these delicious bacon and cheese stuffed potato bites? Freeze them so you can easily take them out when the time comes, on Christmas Eve or a party!

Freeze for three months.

  • Ingredients

    • 10 baby potatoes, cooked and halved
    • 2 green onions, chopped
    • 30 ml (2 tbsp) crumbled cooked bacon
    • 45 ml (3 tbsp) mayonnaise
    • 15 ml (1 tbsp) Dijon mustard
    • 125 ml (½ cup) grated Swiss cheese
    • Pepper from the mill
  • Preparation

    1. Preheat oven to 400F.
    2. Place the bells in a foil packet and cook for 30 minutes.
    3. Remove from the oven and let cool.
    4. Cut the baby potatoes in half and, using a small spoon, remove a little of the flesh, keeping the skin intact, to form small bowls. Mix the flesh and all the ingredients.
    5. Top the potatoes with this mixture and bake for 40 minutes, until the potatoes are tender and golden brown.

Notes and tips

Add 1 finely chopped jalapeno to the stuffing.

“Ready to receive” tip

This recipe can go straight from the freezer to the oven. Place the potato bites on a baking sheet and reheat in a 350F oven for 40 minutes or until the bites are heated through.
