
Salmon burgers and lime mayonnaise
These salmon burgers offer a perfect alternative to traditional beef burgers, plus they contain a touch of freshness perfect for hot summer days!

Ingredients
Burgers:
- 1 can (418 g) salmon, drained
- 4 green onions, chopped
- 1 egg
- 3 tbsp (45 ml) lime mayonnaise
- About twenty crumbled BBQ chips
- 2 tbsp (30 ml) olive oil
- 4 hamburger buns
Lime Mayonnaise:
- 1 egg yolk
- ½ cup (125 ml) olive oil
- The juice and zest of one lime
- Salt and pepper from the mill
Toppings:
- 4 large slices of tomato
- A few lettuce leaves of your choice

Preparation
- In a bowl, mix all the burger ingredients, except the oil and buns, and shape into 4 balls.
- In a frying pan, heat the oil and cook the meatballs for 4 minutes on each side. Keep warm
- For the mayonnaise: In a food processor, beat the egg, incorporating the olive oil in a thin stream. When the texture is firm, add the lime juice and zest. Salt and pepper to taste. Set aside.
- Cook the hamburger buns under the grill until they are golden brown.
- Top the buns with a salmon ball.
- Brush with lime mayonnaise to taste.
- Add a slice of tomato and lettuce.
