Creamy coconut and raspberries

This fresh dessert with a touch of exoticism is prepared with Greek yogurt, coconut milk, brown sugar, chia seeds and fresh raspberries. Add some granola, and you have a healthy breakfast perfect to start the day off right!

  • Ingredients

    • 500 ml (2 cups) plain Greek yogurt
    • 1 can (400 ml) coconut milk
    • 80 ml (1/3 cup) brown sugar
    • 60 ml (¼ cup) chia seeds
    • 375 ml (1½ cups) frozen or fresh raspberries
    • 375 ml (1½ cups) granola
  • Preparation

    1. Divide the raspberries among 6 250 ml (1 cup) jars with lids.
    2. In a bowl, using a whisk, mix all the other ingredients and pour into the 6 jars.
    3. Close and place in the fridge.
    4. Add 60 ml (¼ cup) of granola to each bowl when ready to eat.

Notes and tips

Add 5 ml (1 tsp) of ground cardamom to the coconut milk mixture.
