Galvaude

Craving homemade fast food? Try this recipe for poutine galvaude, topped of course with cooked shredded chicken, green peas, cheese curds and store-bought poutine sauce. Perfect for the weekend or just to please the whole family!

  • Ingredients

    • 1 lb (450 g) potatoes, washed and cut into small sticks
    • 3 tbsp (45 ml) olive oil
    • 1 tbsp (15 ml) smoked paprika
    • 2 cups (500 ml) shredded cooked chicken
    • 1 cup (250 ml) frozen peas
    • 2 to 3 cups (500 to 750 ml) poutine sauce
    • 1½ cups (about 250 g) cheese curds
    • Salt and pepper from the mill
  • Preparation

    1. Preheat oven to 400°F.
    2. In a large bowl, combine potato sticks, olive oil and smoked paprika. Season with salt and pepper to taste.
    3. Place the potato sticks on a non-stick baking sheet and bake for 30 minutes or until the potatoes are golden brown. Turn the fries two or three times during cooking.
    4. Meanwhile, in a saucepan, heat the poutine sauce, chicken and peas over low heat until heated through.
    5. Divide fries among four bowls. Top with cheese curds, and add sauce and chicken mixture.
    6. If you want to eat the galvaudes another day, cook the fries and mix the sauce, chicken and peas. Reheat separately and assemble when ready to eat.
