  • Ingredients

    • 9 lasagna pasta
    • 2 cups red beans
    • 1 cup tri-color bell peppers, cooked and chopped
    • 1 cup corn kernels
    • 1 tbsp taco spice
    • Salt and pepper from the mill
    • 2 cups tomato sauce
    • 1 cup mild salsa
    • 2 cups shredded Tex-Mex cheese
  • Preparation

    1. Preheat oven to 400F.
    2. In a large pot, bring water to a boil. Stir in lasagna noodles and cook for 13 minutes or until al dente. Drain and set aside.
    3. In a rectangular baking dish, spread a third of the sauce and salsa and cover with 3 lasagna noodles.
    4. Add the red beans and 1/3 of the sauce and salsa. Cover with 3 more noodles.
    5. Add the vegetables. Cover with the last 3 lasagna noodles.
    6. Drizzle with remaining sauce and salsa and sprinkle with grated cheese.
    7. Bake for 30 minutes or until cheese is melted and lightly browned.
