
Nourishing Peanut Butter Muffins
Nutritious peanut butter muffins, packed with crunchy peanuts, yet still light and tasty!

Ingredients
- 1 ripe banana
- 375 ml (1½ cups) all-purpose flour
- 5 ml (1 tsp) baking powder
- 1 pinch of salt
- 125 ml (½ cup) butter, softened
- 1 cup brown sugar
- 125 ml (½ cup) peanut butter
- 2 eggs
- 125 ml (½ cup) milk
- 125 ml (½ cup) unsalted peanuts

Preparation
- Preheat oven to 375 F.
- Spray a 12-cup muffin pan with cooking spray or use paper liners.
- In a small bowl, mash the banana. Set aside.
- In another bowl, mix flour, baking powder and salt. Set aside.
- In a third bowl, using an electric mixer, cream the butter with the brown sugar and peanut butter. Add the eggs, and beat until smooth.
- Using a wooden spoon, stir in the flour mixture, milk, mashed bananas and peanuts.
- Divide the batter into the muffin cups.
- Bake for about 30 minutes or until a toothpick inserted in the center of a muffin comes out clean.

Replace peanut butter with almond butter and peanuts with plain almonds.
