Nourishing Peanut Butter Muffins

  • Ingredients

    • 1 ripe banana
    • 375 ml (1½ cups) all-purpose flour
    • 5 ml (1 tsp) baking powder
    • 1 pinch of salt
    • 125 ml (½ cup) butter, softened
    • 1 cup brown sugar
    • 125 ml (½ cup) peanut butter
    • 2 eggs
    • 125 ml (½ cup) milk
    • 125 ml (½ cup) unsalted peanuts
  • Preparation

    1. Preheat oven to 375 F.
    2. Spray a 12-cup muffin pan with cooking spray or use paper liners.
    3. In a small bowl, mash the banana. Set aside.
    4. In another bowl, mix flour, baking powder and salt. Set aside.
    5. In a third bowl, using an electric mixer, cream the butter with the brown sugar and peanut butter. Add the eggs, and beat until smooth.
    6. Using a wooden spoon, stir in the flour mixture, milk, mashed bananas and peanuts.
    7. Divide the batter into the muffin cups.
    8. Bake for about 30 minutes or until a toothpick inserted in the center of a muffin comes out clean.

Notes and tips

Replace peanut butter with almond butter and peanuts with plain almonds.
