Nutritious brownie-style muffins

Made with black beans, cocoa and chia seeds, these muffins are not only nutritious and perfect for satisfying those cravings, but they will also certainly please all those with a sweet tooth, big or small!

Freeze for three months.

  • Ingredients

    • 1 18-ounce can black beans, rinsed and drained
    • 3 eggs
    • 45 ml (3 tbsp) canola oil
    • 60 ml (¼ cup) cocoa
    • 2.5 ml (½ tsp) vanilla essence
    • 125 ml (½ cup) all-purpose white flour
    • 125 ml (½ cup) sugar
    • 30 ml (2 tbsp) ground chia seeds
    • 1 pinch of salt
    • 100g dark chocolate
  • Preparation

    1. Preheat oven to 375F.
    2. In a food processor, place the beans, eggs, oil, cocoa and vanilla. Blend until smooth. Add the flour, sugar, chia seeds and a pinch of salt and mix well.
    3. Melt the chocolate in the microwave. Add to the mixture and mix again.
    4. Pour into a non-stick muffin pan or paper cups.
    5. Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.

Notes and tips

Add 15 ml (1 tbsp) of finely chopped fresh mint to the mixture before cooking.
