Omelet au gratin
Ingredients
- 9 eggs
- 60 ml (¼ cup) cream
- 30 ml (2 tbsp.) butter
- 1 chopped onion
- 500 ml (2 cups) cooked broccoli, coarsely crushed
- 250 ml (1 cup) grated Tex-Mex cheese
- Salt and pepper from the mill
Preparation
- Preheat the oven to 375F.
- In a large bowl, beat the eggs and cream. Add salt and pepper to taste.
- In an ovenproof skillet, heat the butter and cook the onion for 1 minute. Add the mashed broccoli and cook for another minute.
- Add the beaten eggs and place in the oven for 10 minutes.
- Remove from oven, sprinkle with grated cheese and place under broiler for 1 minute or until cheese is golden. Eaten hot or cold.
For adventurers
Add 250 ml (1 cup) of salsa just before sprinkling with grated cheese.
