
Omelet au gratin
An omelette to serve as much at breakfast as at lunchtime, garnished with broccoli and topped with Tex-Mex cheese; a delicious and nutritious meal prepared in just a few minutes and which will please the whole family!

Ingredients
- 9 eggs
- 60 ml (¼ cup) cream
- 30 ml (2 tbsp) butter
- 1 chopped onion
- 500 ml (2 cups) cooked broccoli, coarsely mashed
- 250 ml (1 cup) grated Tex-Mex cheese
- Salt and pepper from the mill

Preparation
- Preheat oven to 375F.
- In a large bowl, beat eggs and cream. Salt and pepper to taste.
- In an ovenproof skillet, heat the butter and cook the onion for 1 minute. Add the crushed broccoli and cook for another minute.
- Add the beaten eggs and place in the oven for 10 minutes.
- Remove from oven, sprinkle with grated cheese and place under the grill for 1 minute or until cheese is golden brown. Enjoy hot or cold.

Notes and tips
Add 250 ml (1 cup) of salsa just before sprinkling with grated cheese.
