Omelet au gratin

An omelette to serve as much at breakfast as at lunchtime, garnished with broccoli and topped with Tex-Mex cheese; a delicious and nutritious meal prepared in just a few minutes and which will please the whole family!

  • Ingredients

    • 9 eggs
    • 60 ml (¼ cup) cream
    • 30 ml (2 tbsp) butter
    • 1 chopped onion
    • 500 ml (2 cups) cooked broccoli, coarsely mashed
    • 250 ml (1 cup) grated Tex-Mex cheese
    • Salt and pepper from the mill
  • Preparation

    1. Preheat oven to 375F.
    2. In a large bowl, beat eggs and cream. Salt and pepper to taste.
    3. In an ovenproof skillet, heat the butter and cook the onion for 1 minute. Add the crushed broccoli and cook for another minute.
    4. Add the beaten eggs and place in the oven for 10 minutes.
    5. Remove from oven, sprinkle with grated cheese and place under the grill for 1 minute or until cheese is golden brown. Enjoy hot or cold.

Notes and tips

Add 250 ml (1 cup) of salsa just before sprinkling with grated cheese.
