  • Ingredients

    • 125 ml (½ cup) graham cracker crumbs
    • 60 ml (¼ cup) shredded sweetened coconut
    • 30 ml (2 tbsp) melted butter
    • 125 ml (½ cup) coconut milk
    • 1 250g packet cream cheese, softened
    • The zest and juice of one lime
    • 60 ml (¼ cup) sugar
    • 2.5 ml (½ tsp) vanilla essence
  • Preparation

    1. In a bowl, mix the graham crackers, coconut and butter.
    2. Place in the bottom of the 6 pots.
    3. In a large bowl, using an electric mixer, beat the coconut milk with the cream cheese, lime zest and juice, sugar and vanilla until smooth.
    4. Spread this mixture over the graham cracker mixture.
    5. Store in the fridge.
