Grilled vegetable pizza
Ingredients
- 1 red pepper in strips
- 1 yellow pepper in strips
- 1 orange pepper in strips
- 1 small red onion, quartered
- 1 small green zucchini sliced
- ¼ cup (60ml) olive oil
- Salt and pepper from the mill
- 1 large pre-cooked pizza dough
- 1 cup (250 mL) leftover cooked meat
- 1½ cups (375 mL) grated cheese
- ¼ cup (60 mL) chopped fresh herbs
Preparation
- Preheat the oven to 400°F.
- In a bowl, combine all the vegetables, oil, salt and pepper.
- Spread on a non-stick baking sheet and cook for 15 minutes or until the vegetables are nicely colored.
- Place the vegetables on the pizza dough, add the meat and sprinkle with cheese.
- Bake for 15 minutes or until cheese is melted and lightly browned.
- Garnish with fresh herbs when serving.
For adventurers:
- Add 1 small, thinly sliced fennel bulb to your vegetable mixture before baking.
