Grilled vegetable pizza

Want to change up your traditional pepperoni and cheese pizza? Try this one, topped with multi-colored peppers, zucchini, leftover meat (or not!), and topped with grated cheese of course. With its store-bought pizza dough, it will not only be easy to prepare, but it will certainly please the whole family!

  • Ingredients

    • 1 red pepper, cut into strips
    • 1 yellow pepper, cut into strips
    • 1 orange pepper, cut into strips
    • 1 small red onion, quartered
    • 1 small green zucchini, sliced
    • ¼ cup (60 ml) olive oil
    • Salt and pepper from the mill
    • 1 large pre-cooked pizza dough
    • 1 cup (250 ml) leftover cooked meat
    • 1½ cups (375 ml) grated cheese
    • ¼ cup (60 ml) chopped fresh herbs
  • Preparation

    1. Preheat oven to 400°F.
    2. In a bowl, mix all the vegetables, oil, salt and pepper.
    3. Spread on a non-stick baking sheet and bake for 15 minutes or until vegetables are nicely colored.
    4. Place the vegetables on the pizza dough, add the meat and sprinkle with cheese.
    5. Bake for 15 minutes or until cheese is melted and lightly browned.
    6. Garnish with fresh herbs when serving.

Notes and tips

Add 1 small bulb of fennel, thinly sliced, to your vegetable mixture before baking.
