Chicken Meal Plate

This sheet pan recipe will have you whipping up a nutritious meal in no time, with a delicious combination of chicken, red onion, cauliflower, broccoli and a balsamic vinegar dressing!

  • Ingredients

    • 2 cups leftover cooked chicken
    • 1 red onion, quartered
    • 1 red pepper, roughly chopped
    • ½ cauliflower cut into small florets
    • ½ broccoli cut into small florets
    • 2 tbsp dried oregano
    • ½ cup olive oil
    • 2 tbsp balsamic vinegar
    • Salt and pepper from the mill
  • Preparation

    1. Preheat oven to 375ºF.
    2. In a large bowl, combine vegetables, spices, oil, balsamic vinegar, salt and pepper.
    3. Bake for 20 minutes or until all vegetables are almost tender.
    4. Add the leftover meat to the baking sheet and bake for another 10 minutes.
