Fruit and Coconut Pudding

Gourmet puddings with coconut, maple syrup and fresh fruit flavors, to be prepared in individual portions to make the perfect back-to-school snack!

  • Ingredients

    • 1 cup (250 ml) rolled oats
    • 2 cups (500 ml) coconut milk
    • ¼ cup (60 ml) chia seeds
    • ¼ cup (60 ml) unsweetened shredded coconut
    • ¼ cup (60 ml) maple syrup
    • 1 cup (250 ml) fresh fruit (use slightly stale fruit)
  • Preparation

    1. Place all ingredients, except berries, in 4 250 ml jars with lids.
    2. Mix well.
    3. Add the berries on top.
    4. Refrigerate for at least 4 hours before serving.
