
Fruit and Coconut Pudding
Gourmet puddings with coconut, maple syrup and fresh fruit flavors, to be prepared in individual portions to make the perfect back-to-school snack!

Ingredients
- 1 cup (250 ml) rolled oats
- 2 cups (500 ml) coconut milk
- ¼ cup (60 ml) chia seeds
- ¼ cup (60 ml) unsweetened shredded coconut
- ¼ cup (60 ml) maple syrup
- 1 cup (250 ml) fresh fruit (use slightly stale fruit)

Preparation
- Place all ingredients, except berries, in 4 250 ml jars with lids.
- Mix well.
- Add the berries on top.
- Refrigerate for at least 4 hours before serving.

Add some chocolate chips on top of the jars.
