  • Ingredients

    • 180 ml (¾ cup) sugar
    • 15 ml (1 tbsp) cornstarch
    • 750 ml (3 cups) frozen berries
    • 250 ml (1 cup) all-purpose flour
    • 10 ml (2 tsp) baking powder
    • 1 pinch of salt
    • 125 ml (½ cup) butter, at room temperature
    • 2 eggs
    • 2.5 ml (½ tsp) vanilla essence
    • 60 ml (¼ cup) milk
  • Preparation

    1. Preheat oven to 375F.
    2. In an 8 x 11-inch baking dish, combine ¼ cup (60 ml) sugar and cornstarch. Add berries and mix well.
    3. In a bowl, mix flour, baking powder and salt. Set aside.
    4. In another bowl, cream the butter and remaining sugar. Add the egg and vanilla. Mix well. Incorporate the dry ingredients alternately with the milk. Spoon this mixture over the berries.
    5. Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
