Berry pudding
Ingredients
- 180 ml (¾ cup) sugar
- 15 ml (1 tbsp.) cornstarch
- 750 ml (3 cups) frozen berries
- 250 ml (1 cup) all-purpose flour
- 10 ml (2 tsp.) baking powder
- 1 pinch of salt
- 125 ml (½ cup) softened butter
- 2 eggs
- 2.5 ml (½ tsp) vanilla essence
- 60 ml (¼ cup) milk
Path to follow
- Preheat the oven to 375F.
- In an 8 x 11-inch baking pan, combine 60 ml (¼ cup) of sugar and cornstarch. Add the berries and mix well.
- In a bowl, combine the flour, baking powder and salt. To book.
- In another bowl, cream the butter and the rest of the sugar. Add egg and vanilla. Mix well. Add the dry ingredients alternately with the milk. Spoon this mixture over the berries.
- Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
For adventurers
Add 2.5 ml (½ tsp) of nutmeg to the berry mixture.
