
BBQ Quesadillas
Gourmet quesadillas topped with Tex-Mex cheese, creamy cream cheese, colorful peppers and red beans: a kid-friendly meal that comes together in just minutes, perfect for busy nights!

Ingredients
- 12 small tortillas
- 250 ml (1 cup) cream cheese, at room temperature
- 500 ml (2 cups) grated Tex-Mex cheese
- 1 small red pepper, chopped
- 1 small green pepper, chopped
- 250 ml (1 cup) corn kernels
- 3 green onions, chopped
- 250 ml (1 cup) red beans, rinsed and drained (optional, adventurous version)
- 60 ml (¼ cup) chopped fresh coriander (optional, adventurer version)

Preparation
- In a bowl, mix the tempered cream cheese and the grated cheese.
- Place 6 tortillas on the work surface and spread the cheese mixture. Spread well.
- Divide all other ingredients and close with a tortilla. Store in an airtight container until ready to cook.
For pan cooking:
- Heat a little oil over medium heat and cook the quesadillas one at a time for 3 minutes on each side or until the cheese is melted and the tortilla is nicely toasted.
For BBQ cooking:
- Heat the BBQ to medium heat and place the quesadillas over direct heat for 2 minutes on each side or until the cheese is melted and the tortilla is nicely toasted.

Notes and tips
Add 1 cup rinsed and drained red beans and ¼ cup chopped fresh cilantro.
