Quiche with chorizo

This quiche is not only tasty, but it will certainly please the most finicky eaters with its dried chorizo, red pepper and mozzarella which make it a perfect quiche for lunch or a quick weeknight dinner!

Freeze for three months.

  • Ingredients

    • 125 ml (½ cup) 15% cooking cream
    • 6 eggs
    • ½ lb (200 g) dried chorizo, coarsely chopped
    • 3 green onions, chopped
    • ½ red pepper, chopped
    • 250 ml (1 cup) grated mozzarella cheese
    • 15 ml (1 tbsp) dried basil
    • Salt and pepper from the mill
    • 2 pie crusts (you will find them ready to garnish in the frozen food section)
  • Preparation

    1. Preheat oven to 375 F.
    2. In a bowl, mix the cream and eggs until the mixture is smooth.
    3. Pour into the crusts and add all the other ingredients.
    4. Bake for about 30 minutes or until quiches are lightly browned with a firm center.

Notes and tips

Replace the dried basil with 15 ml (1 tbsp) of chopped fresh rosemary.
