Italian stew

Discover our comforting stew, combining mild Italian sausages and root vegetables. Brown the sausages with onion in a drizzle of olive oil, then add carrot, parsnip and potatoes, all simmered in a rich beef stock. This stew is perfect for a warming meal, for winter evenings or for a hearty family dinner.

  • Ingredients

    • 30 ml (2 tbsp) olive oil
    • 1 chopped yellow onion
    • 6 large mild Italian sausages
    • 1 large carrot, peeled and cut into small cubes of 1 cm x 1 cm
    • 1 large parsnip, peeled and cut into small cubes of 1 cm x 1 cm
    • 2 medium potatoes, peeled and cut into small cubes of 1 cm x 1 cm
    • 500 ml (2 cups) beef broth
    • 15 ml (1 tbsp) dried Italian herbs
    • 4 bay leaves
    • Salt and pepper from the mill
  • Preparation

    1. In a large skillet with a lid, over medium heat, heat the oil and cook the onion and sausages for 5 minutes, turning regularly.
    2. Remove sausages from pan, slice and return to pan with remaining ingredients.
    3. Cover and simmer for 40 minutes or until vegetables are tender.
