
Orzo salad
A tasty salad topped with sun-dried tomatoes, feta cheese, Kalamata olives and red pepper, perfect for a picnic in the sun or to slip into the kids' lunch box!

Ingredients
- 2 cups (500 ml) orzo
- ½ cup (125 ml) chopped sun-dried tomatoes
- ¼ cup (60 ml) olive oil
- ½ cup (125 ml) coarsely crumbled feta cheese
- 3 tbsp (45 ml) pitted and sliced Kalamata olives
- 1 small red pepper, chopped
- 2 green onions, chopped
- Salt and pepper from the mill

Preparation
- In a pot, bring water to a boil and cook pasta according to manufacturer's instructions. Drain and place in a large bowl.
- Add all other ingredients and mix well. Salt and pepper to taste.
