Salsa pasta salad

A pasta salad with a Mexican flair? Why not! This salad made with fusilli, carrots, peppers and black beans and topped with a generous portion of salsa will please everyone, in addition to slipping perfectly into the lunch box.

  • Ingredients

    • 2 cups fusilli
    • ¼ cup salsa (or more to taste)
    • 1 cup grated carrots
    • 1 cup chopped peppers
    • 2 cups black beans, rinsed and drained
  • Preparation

    1. In a pot, bring water to a boil and cook pasta according to manufacturer's instructions. Drain and place in a large bowl.
    2. Add all other ingredients and mix well. Salt and pepper to taste.

For the adventurous, replace the beans with chickpeas or any other type of legume.
