Ice cream sandwiches
Ingredients
- ½ cup (125 ml) all-purpose flour
- ½ tsp. (3 ml) baking soda
- 1 pinch of salt
- 2 tbsp. (30 ml) chocolate chips
- ¼ cup (60ml) butter
- ¼ cup (60ml) cocoa powder
- 3 eggs
- ½ cup (125 ml) firmly packed brown sugar
- 4 cups (1000 ml) ice cream (your favorite flavor)
Preparation
- Place the rack in the center of the oven and preheat to 400°F.
- In a bowl, combine the flour, baking soda and a pinch of salt. To book.
- In the microwave, melt the chocolate and the butter. Add the cocoa powder and mix well. To book.
- In a large bowl, using an electric mixer, beat the eggs and brown sugar for 3 minutes or until the mixture has doubled in volume. Stir in dry ingredients and chocolate mixture.
- Line a baking sheet with parchment paper and spread the batter evenly on the sheet.
- Bake for 5 minutes or until a toothpick inserted in the center of the cookie comes out clean. Let cool for 15 minutes.
- Cut the biscuit into 12 equal rectangles.
- Let the ice cream soften so that it can be easily spread over 6 cookies without breaking them.
- Add the other 6 cookies to the ice cream to form sandwiches. Remove excess ice cream with a knife.
- Place sheet of ice cream sandwiches in freezer for at least 1 hour before serving or individually wrapping.
For adventurers:
Add ½ tsp. (3 ml) powdered ginger to the flour mixture.
