
Ice cream sandwiches
Why not make your own ice cream sandwiches? The kids will probably enjoy making them with you, for a perfect chocolatey frozen dessert for those beautiful summer days!

Ingredients
- ½ cup (125 ml) all-purpose flour
- ½ tsp (3 ml) baking soda
- 1 pinch of salt
- 2 tbsp (30 ml) chocolate chips
- ¼ cup (60 ml) butter
- ¼ cup (60 ml) cocoa powder
- 3 eggs
- ½ cup (125 ml) firmly packed brown sugar
- 4 cups (1000 ml) ice cream (your favorite flavor)

Preparation
- Place rack in center of oven and preheat to 400°F.
- In a bowl, mix the flour, baking soda and a pinch of salt. Set aside.
- In the microwave, melt the chocolate and butter. Add the cocoa powder and mix well. Set aside.
- In a large bowl, using an electric mixer, beat eggs and brown sugar for 3 minutes or until doubled in volume. Stir in dry ingredients and chocolate mixture.
- Line a baking sheet with parchment paper and spread the dough evenly on the sheet.
- Bake for 5 minutes or until a toothpick inserted in the center of the cookie comes out clean. Let cool for 15 minutes.
- Cut the biscuit into 12 equal rectangles.
- Let the ice cream soften so that it can be easily spread over 6 cookies without breaking them.
- Add the remaining 6 cookies on top of the ice cream to form sandwiches. Remove excess ice cream with a knife.
- Place the sheet of ice cream sandwiches in the freezer for at least 1 hour before serving or wrapping individually.

Add ½ tsp (3 ml) of powdered ginger to the flour mixture.
