Thai Meal Soup

This Thai soup made with coconut milk, curry paste and tomatoes with a touch of ginger, garnished with chicken and fresh mushrooms can be prepared in just 20 minutes and will add a touch of exoticism and warmth to your cold winter days!

Freeze for three months.

  • Ingredients

    • 2 tbsp olive oil
    • 1 lb chicken breast, cut into strips
    • 2 cloves garlic, finely chopped
    • 2 tbsp ginger, peeled and grated
    • 1 tbsp tomato paste
    • 1 tbsp curry paste
    • 1 can of 540 ml coconut milk
    • 1 liter of chicken broth
    • 1 punnet of button mushrooms
    • The zest and juice of one lime
    • 2 cups broccoli, cut into small florets
    • Salt and pepper from the mill
  • Preparation

    1. In a large pot over medium-high heat, heat the oil and cook the chicken for 2 minutes. Stir in the garlic and ginger and continue cooking for 1 minute more.
    2. Add all other ingredients except broccoli and simmer for 10 minutes.
    3. Add the broccoli and simmer for another 5 minutes.
