Yogurt with fruits and vegetables on the bottom
Ingredients
- 2 medium carrots (about 2 cups), very finely grated
- 125 ml (½ cup) of water
- 125 ml (½ cup) brown sugar
- 1 pinch of nutmeg
- 250 ml (1 cup) apple compote
- 500 to 750 ml (2 to 3 cups) plain or vanilla Greek yogurt
Path to follow
- In a pot, bring the carrots, water, brown sugar and applesauce to a boil. Reduce heat to medium-low and simmer for 20 minutes or until carrots are tender and liquid is syrupy. The finer the carrots are chopped, the shorter the cooking time.
- Cool the carrot jam completely. Place 30 ml (2 tablespoons) in the bottom of small snack jars. Cover with Greek yogurt and enjoy!
